Alice Waters – Changing the food system starts at school!
Alice Waters, Vice President of Slow Food, chef and author, activist for food education and owner of the restaurant Chez Panisse in Berkeley, California. In 1996 she created the Edible Schoolyard Project, which in over 20 years has contributed to the spread urban gardening and the value of a healthier food culture among the next generation.

Roman Pizza: feel the crunch!
While Neapolitan pizza is soft, with fluffy texture and the faintest hint of rubberiness as it leaves the oven, Roman pizza has a very different consistency. It’s locally called, or scrocchiarella or “crunchy bite”. It’s akin to layer of puff pastry seasoned so that once it’s cut, the slice remains firm, without drooping.

Chesa or Canistel ice cream in two ways, by Vickee Padilla. Canistel, eggfruit, or tisa, as it is called locally, is a seasonal fruit in the Philippines. The ripe fruits are shades of yellow with a waxy skin and a pulp that has the consistency of a hardboiled egg yolk. Nowadays, this fruit has become increasingly rare and younger generations are not very familiar with it. That’s why it has been listed in the Ark of Taste international catalogue.
